Cassava is a wild harvested root that grows in the tropics. It has a mild, neutral flavor, and a soft powdery texture. It is high nutrient, high fiber, low glycemic, gluten/grain/nut-free, vegan vegetarian, and paleo friendly.
Cassava flour can be substituted 1:1 for wheat flour and all-purpose flour. Cassava flour is a lighter flour and absorbs more liquid than wheat flour. Experiment with your flour and liquid amounts.
