Cassava is a wild harvested root that grows in the tropics. It has a mild, neutral flavor, and a soft powdery texture. It is high nutrient, high fiber, low glycemic, gluten/grain/nut-free, vegan vegetarian, and paleo friendly.

Cassava flour can be substituted 1:1 for wheat flour and all-purpose flour. Cassava flour is a lighter flour and absorbs more liquid than wheat flour. Experiment with your flour and liquid amounts.

Cassava is another name for the locally proliferate yucca. If you are gluten intolerant, please try this flour and if it can fill some of our needs, we’ll search for a local means of production.
